The Authentic Foods GF Classical Blend is a simple all purpose gluten free, corn free baking flour created by Annalise Roberts, author of Gluten-Free Baking Classics. This all purpose flour is great for making gluten free cakes, muffins, cookies and pie crusts. Although, the GF Classical Blend is not recommended for making breads.
Measuring the Flour
Empty the flour into a plastic container large enough to leave several inches from the top. Shake container vigorously to aerate the flour mix. With a soup spoon, spoon the flour from the container into a measuring cup, leveling it off with a knife or spoon. Do not scoop gluten free flours out of the contain with the measuring cup.

This recipe is taken from the book, Gluten Free Baking Classics. They are easy to make with very little preparation.
1 cup granulated sugar
2 large eggs
1 1/4 cup Authentic Foods GF Classical blend
1/4 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon Authentic Foods Xanthan Gum
1/2 cup canola oil
1/2 cup milk
1/4 teaspoon Authentic Foods Vanilla Powder
Preheat oven to 350 degrees Fahrenheit. Position rack in center of oven. Place cupcake baking liners in a 12-cupcake baking pan.
Beat sugar and eggs in large bowl of electric mixer at medium speed for 1 minute. Add flour, salt, baking powder, Authentic Foods Xanthan Gum, oil, milk and Authentic Foods Vanilla Powder; beat at medium speed for 1 minute.
Pour batter into prepared cupcake cups. Place cupcake pan in center of oven and bake for about 20 minutes or until center springs back when touched and cupcakes are lightly browned.
Cool on rack for 5 minutes. Remove cupcakes from pan onto rack and cool completely before icing.
Top with your favorite frosting.
