Golden Muffins

1 cup Authentic Foods Pancake & Baking Mix 1 teaspoon cinnamon
½ cup of Authentic Foods Maple Sugar 2 tablespoons corn oil
1 tablespoon sugar 1 egg or 2 egg whites
½ teaspoon baking powder ¼ cup non-dairy cream
1/8 teaspoon Authentic Foods Xanthan Gum 2 tablespoons water
1/8 teaspoon allspice

Preheat oven to 375°. In medium bowl, combine Authentic Foods Pancake & Baking Mix, Authentic Foods Maple Sugar, sugar, baking powder, Authentic Foods xanthan gum, allspice, and cinnamon. In another bowl, beat oil, egg, non-dairy cream, and water; add to contents of medium bowl and stir until smooth. Divide batter into 6 muffin cups and bake in preheated 375° oven for approximately 20 to 25 minutes or until golden brown. Muffins are done when toothpick inserted in center comes out clean. Makes six 2½ ounce muffins.

Variations: Add ½ cup raisins presoaked in water and ¼ cup chopped almonds to batter.

 

Banana Nut Muffins

Will make six 2.5oz muffins

1 Cup of Authentic Foods Pancake & Baking Mix 1 Egg (Egg Whites OK)
¼ Cup of Chopped Walnuts 7 Tablespoons of Authentic Foods Maple Sugar
¼ Cup of Corn Oil ¼ Teaspoon of Banana Extract
½ Cup of Milk

In a bowl, combine Muffin Mix with maple Sugar, chopped walnuts, and mix. In another bowl, beat together oil, egg, milk, and banana extract Add to first bowl and mix gently. Do not over mix. Pour or scoop batter into muffin pan and bake in preheated oven approximately 350 to 375 degrees for 20 minutes until golden brown. To test if muffin are done, insert cake tester into muffin. If it comes out clean, they are ready.

 

Onion Cheese Muffins

Will make six 2.5oz muffins

1 Cup Authentic Foods Pancake & Baking Mix 1/3 Cup of Chopped Onions
2 Tablespoons of Authentic Foods Maple Sugar ¼ Cup of Corn Oil
½ Cup of Shredded Cheddar Cheese 3/4 Cup of Milk
2 Teaspoons of Garlic Powder 1 Egg

In a bowl, combine Muffin Mix with maple sugar, shredded cheddar cheese, garlic powder, and chopped onions. In another bowl, beat together milk, oil, and egg. Add to first bowl and mix gently. Do not over mix. Scoop or pour batter into muffin pan and bake in preheated oven for approximately 350 to 375 for 20 minutes. To test if muffins are done, insert cake tester into muffin. If it comes out clean, they are ready. This recipe can also be made into a quick bread.

 

Apple Cinnamon Muffin

Will make 6 2.5oz Muffins

1Cup Authentic Foods Pancake & Baking Mix 1/2 Cup of Authentic Foods Maple Sugar
¼ Cup of Corn Oil or Safflower Oil 1 Teaspoon of Cinnamon
3/4 Cup of Apple Juice 2 Apples peeled and chopped
1 Egg (Egg Whites ok)

In a bowl, combine Pancake & Muffin Mix with maple sugar, cinnamon and mix. In another bowl, add oil, egg, apple juice, and beat. Add to first bowl in fold in. Add chopped apples and mix lightly. Put batter into buttered muffin pan and bake at 350 degrees for approximately 15 minutes until golden brown or cake tester inserted comes out clean.

 

Chocolate Chip Cupcakes

Will make twelve 2.5ounce cupcakes

2 Cups Authentic Foods Pancake Mix (10oz) ¼ cup of corn oil
½ Cup of Cocoa (70 grams) 2 eggs
15 Tablespoons of Authentic Foods Maple Sugar 1¼ cups of milk
½ Cup of Semi Sweet Chocolate Chips

In a bowl, combine all dry ingredients and mix. In another bowl, combine all liquid ingredients and blend well. Combine wet and dry mixture and fold together gently until just mixed. Pour or scoop batter into muffin cups. Bake in preheated 375 degree oven for approximately 20 minutes until golden brown. To test if muffins are done, insert cake tester or toothpick. If it comes out clean, they are ready.

Cinnamon Nut Muffin By Glenda Worm

2 cups of Authentic Foods Cinnamon Bread Mix 1 teaspoon of yeast
2 tablespoons of nonfat dry milk powder 2 eggs
1/3 cup of walnuts 1/4 cup sour cream
1/3 cup of dried cranberry 1 cup warm water

Mix all wet ingredients in one bowl and the dry in another.   Combine both together and mix.  Place batter into muffin pans and let it rise.   Then bake in preheated oven at 375 degrees for approximatley 20 to 50 minutes until brown.  Take out of the oven and let it cool.  Enjoy!

Falafel Muffins

A Middle Eastern Muffin

1/2 Cup Authentic Foods Falafel Mix 2 Eggs
1 1/2 Cups of Authentic Foods Brown Rice Flour 3/4 Cups of milk
1/2 Cup of Corn Oil 1 teaspoon Baking Powder
1/2 Cup of Authentic Foods Maple Sugar 1/4 teaspoon of Authentic Foods Xanthan Gum
1/2 cup Honey

In a bowl, combine Authentic Foods Falafel Mix with maple sugar, brown rice flour, baking powder, xanthan gum, and mix. In another bowl, beat together oil, eggs, honey and milk. Add to first bowl and mix gently. Pour or scoop batter into muffin pan and bake in a 350 degree preheated oven for approximately 20 to 25 minutes or until golden brown. Allow to cool in muffin pan for 2 to 4 minutes before removing.
