How to thicken sauces with the Authentic Foods Corn Starch
Cool the sauce or liquid that you would like to thicken. Then mix in corn starch, a tablespoon at a time to thicken.
To heat the sauce or liquid again, heat at medium temperature while mixing constantly.
If ingredients need to be added after the sauce has been heated, then remove the mixture from the heat and stir the ingredients in quickly and gently.
What not to do when cooking with the Authentic Foods Corn Starch
Do not stir sauces containing corn starch too vigorously. This may cause the mixture to break down and thin out.
2. Do not cook sauces or liquids with corn starch over high heat. This may cause the corn starch to create lumps.
3. Don’t cook sauces or liquids with corn starch too long. This may cause the starch granules to break down resulting in a mixture that will thin out as it cools.

Brazilian Biscotti
Ingredients:
2 cups Authentic Foods Corn Starch
1 egg
1 1/2 sticks unsalted butter at room temperature
1 cup sugar
1/2 teaspoon salt
Directions:
Preheat oven to 350 degrees Fahrenheit.
In a medium bowl, sift the corn starch, sugar and salt and blend together. Using an electric mixer, blend in the egg and butter. Let the dough rest for ten minutes. Using the palm of your hands, shape the dough into one inch balls and place them on a greased cookie sheet. (Optional: for decoration, use the tines on a fork to make small grooves on the cookies.) Bake the cookies in the oven for about seven minutes. Let them cool and serve with tea or coffee.
