Millet Flour

Authentic Foods millet Flour is Non-GMO and is milled to a superfine flour to add more nutrition to all kinds of baked goods.   The flour is easily digested with a tendency to be alkaline allowing the body to balance the natural tendency towards acidity.  Millet flour is a natural good source of protein, essential amino acids, manganese, phosphorus and magnesium. The flour has a distinctive flavor and lends to a good "crumb' to cakes and cookies.  It may also be added to batters for frying various poultry or red meat.  To use millet flour for substitutions, it is best to start with a 3 to 1 ratio of gluten free flour to millet flour and then adjusting the taste and dough consistency. 

Almond Millet Pancakes (Ten 6 inch pancakes)

Ingredients:
1/4 cup Millet Flour
1/2 cup Almond Flour
1 cup  Potato Starch
1/4 teaspoon Xanthan Gum
1 tablespoon sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon Authentic Foods Vanilla Powder
1 cup  milk
2 large eggs
1/4 cup (2 oz) unsalted butter, melted
2 tablespoon honey


Directions:
Preheat the griddle to 375 degrees F. Mix all dry ingredients in a bowl.  In another bowl, beat the eggs along with the melted butter.  Then add milk and honey to the egg and butter mixture and blend.  Slowly add the dry ingredients until blended.  Let it sit for 10 minutes.  Take a large spoon and drop sufficient batter to form a 6 inch diameter pancake.  Cook first side until bubbles start to form and edges look dry.  Flip over and cook until golden brown.  Serve with fruit, maple syrup, or preserves.
