Traditional Belgian (Liege) Waffles
These are the best waffles we've ever had. This brioche-like dough is everything you want in a waffle, crispy, rich and has just the right amount of sweetness to balance as a savory or sweet dish! Great with a cup of coffee or even better with strawberries, whip cream and hot fudge!

Ingredients:

2 Cups plus 2 Tablespoons (294 grams)

Authentic Foods Steve’s GF Bread Flour Blend

2 1/2 Tablespoons (32 grams)

Granulated Sugar

1/2 teaspoon (3 grams)

Salt

1/2 teaspoon (3 grams)

Authentic Foods Vanilla Powder

1 packet (7 grams)

Yeast

1/2 cup (114 grams)

Water, warm

3 ounces plus 1 Tablespoon (100 grams)

Milk, warm

5 Tablespoons (70 grams)

Butter, melted

3 Tablespoons (40 grams)

Light Olive Oil

1 (50 grams)

Egg, large

1 Tablespoon (20 grams)

Honey

2/3 Cup (114 grams)

Belgian Pearl Sugar

Directions:

  1. To make dough combine Authentic Foods Steve’s GF Bread Flour Blend, sugar, salt, Authentic Foods Vanilla Powder, and yeast in mixer bowl.
  2. In separate bowl whisk together water, milk, butter, oil, egg, and honey.
  3. Using dough hook to mix, add liquids to dry ingredients and mix on medium speed until smooth dough is achieved. Remove from mixer bowl and place on work surface. Knead lightly to smooth out dough and add Belgian Pearl Sugar. Work into dough by hand until evenly distributed.
  4. Divide dough into 6 equal pieces, about 5 ounces each. Place on parchment lined sheet pan and cover with plastic. Leave in warm spot to rise until doubled in size, about 1 hour.
  5. While dough is rising preheat waffle iron according to manufacturer’s instructions. Heat to medium low heat.
  6. Once risen cook off one waffle at a time for about 2-3 minutes each. Pearl sugar should melt and coat outside of waffles.
  7. Remove from waffle iron and allow to cool slightly for caramelized sugar to harden before serving.

Whether you like this recipe will depend on whether you like light texture Belgian Waffles or heavy, dense ones. The flavor was okay but not great, but the texture was a killer for me. They were very disappointing.
