Crumble Coffee Cake
This cinnamon crumble coffee cake is the perfect way to start your day!

Ingredients:

Coffee Cake:
1/2 cup Authentic Foods Multi-Blend Flour
3/4 cup Sugar
2 teaspoon Baking Powder

1/2 teaspoon Salt
2 eggs
3/4 cup Milk

1/4 cup Olive Oil
1/8 teaspoon Xanthan Gum



Crumb Topping:

4 tablespoons Butter
4 tablespoons Sugar

1/2 cup Multi-Blend Flour
1/4 cup Almond Meal

2 teaspoons cinnamon

 

Directions:

Preheat oven to 350 degrees Fahrenheit.  Grease an 8 x 8 inch or 9 x 9 inch pan.  Then follow the directions for the crumb topping and coffee cake.

Crumb Topping:
Cut up butter into cubes.  In a large mixing bowl, combine Authentic Foods Multi-Blend Flour, Authentic Foods Almond Meal Flour, sugar and cinnamon.  Blend in the butter until the mixture has a crumb consistency.  Set aside to add to the top of the coffee cake.

Coffee Cake:
Combine Authentic Foods Multi-Blend Flour, sugar, baking powder, Authentic Foods Xanthan Gum and salt together in a large mixing. In another bowl, beat eggs. Then add olive oil, followed by milk. Stir the liquids into the dry ingredients and mix until a batter is formed. Pour the batter into the greased pan and sprinkle with the crumb topping. Slightly pat the crumb topping into the coffee cake batter. Then bake in the oven for 30 minutes. Let the cake sit for at least 15 minutes before serving.

This recipe produced a successful cake. I added about 2/3 cup of pitted 'sour pie cherries' to the batter, which gave a fresh boost. Unfortunately, for my oven, the baking time was not long enough. I used a 9"x9" pan and should probably have baked for an additional 20 to 25 minutes, to avoid gummy texture in centre. The crumble wasn't very crumbly. I certainly enjoyed eating the result.

Excellent recipe! I made this with goat milk since we have a gluten and dairy allergy. My family and friends LOVED it. I have made it several times and it is always a hit.

Best coffee cake and easy to make. I used brown sugar for the crumb topping. :d

This is a wonderful recipe. I added a little brown sugar to the crumb topping to make it a bit more of a crumble as the first time it was not as much of a traditional crumb topping as I was thinking it would be. All of the recipes on this site have been so tasty and easy to prepare. Lemon bars my favorite so far. Thanks so much for all of your hard work and terrific recipes. Every product from Authentic Foods that I have used/purchased if far superior to anything else on the market in its' class that I have found. Wonderful. Making life a whole lot nicer for so many people.
