Classic Gluten-Free Pancakes

Ingredients:

2 eggs (or 4 egg whites)

1 cup milk or milk substitute

2 tablespoons vegetable oil

2 tablespoons Authentic Foods Maple Sugar or brown sugar

1 cup of Authentic Foods Pancake & Baking Mix

Directions:

In a medium bowl, beat together eggs, milk, oil and sugar. Gradually stir in the pancake mix until the batter is smooth. Preheat griddle or skillet that has been lightly coated with oil to keep pancakes from sticking. Using a large tablespoon, drop batter to make about 4-inch diameter pancakes. Cook first side until bubbles form and begin to pop and edges look dry. With spatula, turn and cook until second side is golden brown. If desired, serve with syrup, preserves or fruit.  

Variations: Add 1/3 cup of chopped fresh fruit, 1/3 cup of dried fruit, 1/3 cup of mini chocolate chips, or 1 whole banana mashed with 1/3 cup of walnuts.

I added 3 teaspoons of baking powder and the recipe was awesome!!!!!

I followed the recipe EXACTLY and that's what I'm on this site to find out where I can buy this amazing product. The pancakes were perfect! - light and fluffy and not too sweet. I served them with a sliced banana and 1/2cup unsweetened defrosted raspberries. Still licking my lips!

We absolutely love these pancakes. I did make one change to the recipe. For the flour I used 1 cup Multiblend and 1/4 cup teff flour. They taste just like whole wheat pancakes! Thank you Authentic Foods!
