Pre-heat the griddle to 400 degrees. Using a paddle attachment on a stand mixer, combine all ingredients and mix on low until the dough starts to come together into a ball, 2-3 minutes. Divide the dough into 1oz pieces and roll them into a nice smooth ball. Prepare the tortilla press by covering it with a plastic wrap. On the tortilla press, press the ball down to a flat round shape and then press down a few times until about 4" diameter and 1/16" thickness. Cook on the griddle for 50 seconds on one side, then flip over and cook another 40 seconds on the other side. The tortilla should be soft enough to fold over with breaking, so be careful not to over cook it.
You can use the tortillas to make tacos, enchilidas, burritos and much more. We also use the tortillas to hold scrambled eggs, ham, turkey, cheese, etc. Warm them up for a tasty snack or meal.
