Pumpkin Spice Cake with Brown Butter Frosting

Ingredients:

Pumpkin Cake Ingredients:

1 2/3 cup (233g) Steve's GF Cake Flour Blend
2  teaspoon (3.9g) Ground Cinnamon
1/4 teaspoon (0.6g) Ground Nutmeg
1/4 teaspoon (0.5g) Ground Allspice
1 1/2 teaspoon (3.4g) Ground Ginger
1/2 teaspoon (2.4g) Baking Soda
2 teaspoon (6.6g) Baking Powder
1/4 teaspoon (0.5g) Authentic Foods Xanthan Gum
1 1/2 cup (319g) Sugar
1 teaspoon Salt
1 stick (8 Tbsp) Unsalted Butter
2 Large Eggs
1 Cup (246 g) Pumpkin Puree
1/4 Cup (84 g) Honey
1/2 Cup Warm Milk

Butter Icing Ingredients:

2 teaspoon (7.4 g) Authentic Foods Vanilla Powder
1 Stick (8 Tbsp) Unsalted Butter
1 1/2 cup (175 g) Confectioners' Sugar
1/2 teaspoon (3.5 g) Salt
2 Tbsp 2 teaspoon Milk

Directions:

Pumpkin Cake Instructions:

  1. Pre- heat the oven to 325F and line a 9 x 2 inch round cake pan with parchment paper.
  2. In a large bowl, sift together the Steve’s GF Cake Flour Blend, cinnamon, nutmeg, allspice, baking powder and Authentic Foods Xanthan Gum.
  3. In a bowl an of an electric stand mixer fitted with the whisk attachment, cream the sugar and butter together until it is light and fluffy.
  4. Slowly add the eggs, then pumpkin puree and honey until it is all just combined.
  5. Add the flour and spice mixture by starting on low and gradually increasing speed until you reach medium speed. Mix at medium speed for about 3 minutes. Add the milk 1/4 cup at a time, making sure everything is well mixed before adding the next part. Mix on high speed for 30 seconds.
  6. Pour the batter into your lined cake pan and bake for 35-40 minutes. Transfer to a wire rack to cool – the internal temperature should reach between 208-210. Allow the cake to cool for at least half an hour before applying frosting.

Brown Butter Frosting Instructions:

  1. In a 2 quart sauce pan, melt the butter on medium heath consistently stirring until it starts to turn slightly brown, 5 minutes or so.
  2. Immediately take off the heat and continue to stire so that the brown butter particles do not stick on the bottom of the pan. Allow the butter to cool.
  3. In a bowl of an electric mixer fitted with a paddle attachment, combine the browned butter, confectioners’ sugar, cornstarch, salt and Authentic Foods Vanilla Powder. Add the milk and mix it until the mixture becomes smooth.

Cut the Cake in half lengthwise to make 2 layers and spread the icing around the cake! Enjoy!

5 starts for sure. This recipe is absolutely amazing! I use my own flour blend but that is the only change I made. Wow! I highly recommend trying this one! Enjoy!
