Gluten-Free Pigs in a Blanket
A Favorite Snack for any party, but these little bites are the perfect snack food Sunday football! Easy to make and sure to be a homerun! Serve with your favorite dipping sauce and voila!

Ingredients:

1 bag

Authentic Foods Pizza Crust Mix (300 grams)

7 grams (1 packet)

Instant Yeast

300 grams (1 1/3 Cups)

Water, warm (about 95F)

1 Tablespoon

Oil

Mini Hot Dogs (Hot Dogs Cut in 2 in. long pieces)

10-12 ounces

Grated sharp cheddar, or preferred cheese

1

Egg, lightly beaten with 1 Tablespoon of water

 

Sesame seeds for sprinkling on dough (optional)

 

White rice flour for dusting

Directions:

  1. Add yeast to pizza crust mix in bowl of stand mixer. Combine oil and water. Use dough hook and with mixer running gradually add oil and water to dry ingredients. Continue mixing until smooth dough forms, scraping down sides as necessary. Mixing should take about 5 minutes.
  2. If dough is sticky coat hands lightly with white rice flour to handle dough. Place on work surface and knead lightly then roll into a ball. Place into lightly oiled bowl and cover with plastic wrap. Allow to rise until doubled in size.
  3. When dough is almost done rising begin preheating oven to 350F.
  4. Once risen punch dough to release gases and place on work surface. Knead lightly to smooth out dough and shape it into a square. Dust top and bottom with rice flour and begin rolling out dough with rolling pin. Roll into an 11x18” rectangle.
  5. Using a pizza cutter cut longer side into 6 even pieces and cut shorter side into 7 even pieces. You should end up with 42 rectangles that measure about 1.5x3 inches. Brush one end of each strip lightly with egg wash.
  6. With a knife cut a small slit through each mini hot dog and fill the opening with grated cheese. Place on a strip of dough on dry side and roll it up. The egg wash along the end will seal the dough together and prevent it from opening.
  7. Place pigs in a blanket onto a sheet pan and brush tops with egg wash. Sprinkle tops with sesame seeds and place in preheated oven.
  8. Bake until golden brown, about 12-15 minutes, rotating pans halfway through baking.
