Old Fashioned Custard Pie

Ingredients:

3 Whole plus 1 yolk (170 grams)

Eggs

3/4 Cup (147 grams)

Granulated Sugar

1/4 Teaspoon

Salt

1 1/4 Teaspoons

Vanilla Extract

1 3/4 Cups (384 grams)

Directions:

  1. Make Authentic Foods Flaky Gluten-Free Pie Crust.
  2. While crust is baking combine eggs, sugar, vanilla, and salt in a bowl.
  3. In a pot heat up milk until steaming and just beginning to simmer. Remove from heat and slowly add the warm milk into egg mixture while whisking to combine. Whisk gently to not create too many bubbles over custard mixture.
  4. Pass custard mixture through fine mesh sieve to remove any bits of egg or bubbles formed while whisking.
  5. Once pie crust is ready, take custard mixture to oven. Gently pour custard into baked pie crust and slide back into oven.
  6. Bake for 10 minutes at 400F then reduce temperature down to 325F. Bake for an additional 20-30 minutes until custard is mostly set, but still soft and jiggly in the center. Custard should not be allowed to brown in oven.
  7. Once baked remove from oven and cool to room temperature. Cover in plastic and refrigerate until completely set, about 3-4 hours or overnight.
