Spicy Chocolate Cookies with Dulce De Leche
These chocolate cookies have a rich chocolatey taste with a surprise at the end of each bite. Recipe inspired by Brittany Darwell of the blog, HeCooksSheCooks.net.

Ingredients:

12 tablespoons unsalted butter, softened
1 cup granulated sugar
3/4 teaspoon Authentic Foods Vanilla Powder
1 egg
1 cup 4 tablespoons Authentic Foods Multi-Blend Flour
3/4 cup unsweetened cocoa
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 teaspoon baking soda
1 cup to 1 jar of dulce de leche (optional)

Directions:

In a medium bowl combine the Authentic Foods Vanilla Powder, Authentic Foods Multi-Blend Flour, unsweetened cocoa, granulated sugar, cayenne pepper, salt, black pepper and baking soda.  In a larger bowl, cream the butter and sugar together using an electric mixer.   Add the egg and slowly add the dry flour mixture.  Mix until a dough forms and the flour is completely incorporated into the dough.
 
Shape the dough into a disc and cover with plastic wrap.  Place the dough in the fridge for at least 30 minutes to an hour.
 
Preheat oven to 375 degrees Fahrenheit.  Cover a cookie sheet with parchment paper.
 
Cover a cookie sheet with parchment paper.  Roll out the cookie dough with a rolling pin on a floured surface until approximately 1/4 inch thick.  Cut the dough into your desired shapes using cookie cutters.  Place the cut out cookies onto the parchment paper about 1 inch apart.

Bake in the middle rack of your oven for 5 to 7 minutes.  The cookies should be soft to the touch when you take them out.  Let them cool on the cookie sheet for 5 minutes and then transfer them to a wire rack.

When the cookies are completely cool, place a dollop of dulce de leche on half of the cookies and place another cookie on top to make a sandwich.
