Crumble Coffee Cake
This cinnamon crumble coffee cake is the perfect way to start your day!

Ingredients:

Coffee Cake:
1 ½ cup Authentic Foods Multi-Blend Flour
3/4 cup Sugar
2 teaspoon Baking Powder
½ teaspoon Salt
2 eggs
3/4 cup Milk
¼ cup Olive Oil
1/8 teaspoon Xanthan Gum



Crumb Topping:

4 tablespoons Butter
4 tablespoons Sugar
½ cup Multi-Blend Flour
¼ cup Almond Meal
2 teaspoons cinnamon

 

Directions:

Preheat oven to 350 degrees Fahrenheit.  Grease an 8 x 8 inch or 9 x 9 inch pan.  Then follow the directions for the crumb topping and coffee cake.

Crumb Topping:
Cut up butter into cubes.  In a large mixing bowl, combine Authentic Foods Multi-Blend Flour, Authentic Foods Almond Meal Flour, sugar and cinnamon.  Blend in the butter until the mixture has a crumb consistency.  Set aside to add to the top of the coffee cake.

Coffee Cake:
Combine Authentic Foods Multi-Blend Flour, sugar, baking powder, Authentic Foods Xanthan Gum and salt together in a large mixing. In another bowl, beat eggs. Then add olive oil, followed by milk. Stir the liquids into the dry ingredients and mix until a batter is formed. Pour the batter into the greased pan and sprinkle with the crumb topping. Slightly pat the crumb topping into the coffee cake batter. Then bake in the oven for 30 minutes. Let the cake sit for at least 15 minutes before serving.

This recipe produced a successful cake. I added about 2/3 cup of pitted 'sour pie cherries' to the batter, which gave a fresh boost. Unfortunately, for my oven, the baking time was not long enough. I used a 9"x9" pan and should probably have baked for an additional 20 to 25 minutes, to avoid gummy texture in centre. The crumble wasn't very crumbly. I certainly enjoyed eating the result.
